Polenta with mushrooms

Hi all, the today offer polenta with mushrooms contains only three main ingredients!

Mushrooms, cornmeal, red onion.

It`s a very tasty, nutritious, easy and fast for preparing dish.

Polenta with mushrooms

INGREDIENTS:

  1. Mushrooms – 300g (mixed Horse Mushroom + The Prince Mushroom)
  2. Cornmeal – 1 cup polenat/cornmeal
  3. One big red onion
  4. Balsamic vinegar, olive oil, salt and black pepper to taste

*Please notice, the mushrooms were only cleaned by  a wet towel,  not washed to prevent any liquid they give off.

Have the mushrooms quarter if large and leave  them  whole if smaller. When the olive oil is hot, add the mushrooms and saute  until most liquid evaporates and start changing their  color to gold. Add salt, pepper, onion and  balsamic vinegar by the edge of frying pan. When the  liquid is evaporated put additional olive oil  and bring to simmer  for 2 to 3 min , then  remove from the oven  and sprinkle with fresh herbs (oregano )

For the polenta:

In a medium saucepan, bring  1l of  water and 1 tablespoon of the salt (but not full one) to a boil. Add the cornmeal (1 cup ) in a slow stream, whisking to prevent formation  of a large cornmeal lump. By the same reason keep   stirring frequently with a wooden spoon until very thickened.
